In this case, there’s clove, nutmeg, cardamom, red cherry, and pheasant to savor; the profile was so spicy that, when this was served blind, I thought we were in Vosne or Echezeaux! Yet, for all that’s packed in here, it’s a weightless beauty on the palate.
