Wednesday, February 23, 2022 - Deep golden, bronzed colour. Nutty, honeyed, mushroomy nose. Hugely thick and unctuous. Dense, rich, big. Almonds, olive oil, tiny amount of bitterness, which reins in all this opulence. Ageing with elegance. Impressive and serious but not exactly versatile - it's limited because it lacks freshness. It's almost like it's a food in its own right. Baked apple, cinnamon, creme caramel.
