Really high acidity on the palate and I now know what the sales clerk meant when he said Pepiere is often less round and finessed than the Luneau Papin wines. Some more lemon zest and salty brine on the palate. Finishes well, but very acidic. Excellent with some Fleur des Alpes cheese (essentially Reblochon aged an extra 5 days). I can see how this would also be a great match to Oysters on the half shell, but I'm unsure about how good this is when consumed on its own.
