Monday, December 6, 2021 - {Bought on release, professional storage since then, perfect fill} Tasted over 3 days. Day 1 a glass with argon fill; Day 2 opened to room air, and kept overnight with vacuum. Initial pours - quite briary, lean like a Beaune with savory fruits and some tartness. After ~ 3 hours of air really started to fill out and the complexity of the wine shone through. Delicious when fully aired.
