  • I should say first, I'm not really ever a fan of Cotes de Beaune reds. This wasn't bad and definitely inexpensive for what you get. I opened it for 3 hours after seeing all the CT reviews. It wasn't enough. The last glass poured around 2.5 hours later actually started to come around and drink nicely. Decent aged Burgundy but not my style and not worth having to go to the trouble of opening so far ahead of drinking.

  • Lovely concentration of dark red fruits and spices on the nose and palate, with round tannins and a savory finish. A touch of floral is perceptible with swirling, but this is mostly about the fruit and spice. Has good depth and length with nothing over the top. Pavelot’s top Savigny, and a lot of class for the buck. In a perfect drinking window now and for the nest five years.

  • Burgs, Birds, and Black Truffles (My place, Portland OR): The nose has a robust and brawny quality with raspberries, sour red cherries, plums, earth notes, violets, leather, sweet tobacco leaves, licorice, and savory spices. There is good depth and style here with a bit of primary quality that still exists to the fruit. The Medium bodied feel is savory and robust with tart, medium+ acidity and slightly coarse, medium+ tannins. The tannins are still a bit present and rough with it not showing off much resolution. If the tannins are able to resolve, this could see some more upside but I'm not entirely confident of that at this point.

  • (Small glass tried with argon 2 days ago; very challenging briary, tart. Second small glass with argon, allowed to air in open glass overnight, much better. Note based on now opened bottle day 3.) This wine needs food and air to reward you. leathery, briary, red & black complex fruit, very good depth and length, perhaps even elegance eventually, but not much in the way of attractive aromatics to start. The quality of the fruit -the grapes- is excellant.

    Would never open this wine to show a friend the "easy" gorgeous fruit some burgs have, as it is the antithesis of that. Rigorous, structured, vins de garde wine made in a not fruit- forward year ... with lots of merit. An old-styled Cornas, or Savigny version of Faiveley''s Corton Clos des Corton, of Burgundy. Tonight seems like it will go 50 years, balance is right for now; and hope it persists.

    If you've never drunk wine like this, it elevates your pleasure in a food like a steak ... and rivals or betters other reds from around the world ... rarely add a personal comment to a CT note but this ugly duckling wine- with air - would blow away many other red wines and if you have some bottles, don't despair. Just air it and match the food.

    For now, open at least 3 hours before serving, and pair with food rich in protein and fat - for example, cheese - and this will shine. (Pop and pour... doomed to not show well well).

  • {Bought on release, professional storage since then, perfect fill} Tasted over 3 days. Day 1 a glass with argon fill; Day 2 opened to room air, and kept overnight with vacuum. Initial pours - quite briary, lean like a Beaune with savory fruits and some tartness. After ~ 3 hours of air really started to fill out and the complexity of the wine shone through. Delicious when fully aired.

  • Served from a 1.5 ltr bottle on Thanksgiving and opened 5 hours ahead of time, served with dry-brined rotisserie turkey. Upon initial opening, the wine seemed to lack fruit and tasted pretty thin, and I was prepared to think this a bust for the dinner, although the bouquet was pleasant right from the get-go. However, it really opened up and paired perfectly with the turkey several hours later. Rather intense aromas of dried red fruit, a touch of earthy leather, Asian spice, and smoke, which my son said reminded him of bar-b-que potato chips! The flavors had smoothed out and I'd say nicely rounded, medium-bodied, with a decently long finish. Over the years, I have been a bit disappointed in Pavelot's wines, especially when some have been given high praise by most critics. This one was a pleasant surprise and it may even improve a little for two or three years.

  • Decanted 2 hours. Color is still relatively young. Nose has faint fruit but not the red cherry of the 2007 a few nights ago - more muted. On the palate this also has less of the red cherry fruit and more mineral and earth than the 2007. All in a reasonable wine that I am not sure will ever improve much - maybe a touch with more age and complexity, but for me this falls a bit short of the professional ratings at this point in time. B+/A-?

  • A perfectly acceptable rendition of a Pavelot Dominode. Lithe and light on it's feet with plenty of Dominode earth to offset the crunchy red fruit. The tannin are still a bit rustic and it may lack some fruit to really improve. My guess is that this could be one of those bottles that surprises when it's 30+ and full of autumnal bottle sweetness.

  • This bottle was a bit rough on opening, showing that burr-like, rough acid streak you find in some 06 Burgundies, at least from Savigny-les-Beaune (found this also in Bize's 06 Vergelesses). With some air time, the wine smooths out very nicely and settles down as a fine, slightly plush 1er red Burg, satisfyingly round, fair depth and complexity. The tannins persist somewhat stiff and unyielding, but they are a minor distraction from an otherwise delicious wine.

  • Light crimson in color. Almost translucent. 13% ABV. Intriguing nose of red fruits, anise, earth and wet stones. Medium body with medium acidity. The palate is all about sour cherries, cranberry, mushrooms and blood. Medium length on the finish. This wine took a little while to come around so I think an hour decant would be beneficial. Showed really well with oven roasted ham. Best over the next 3-5 years.

  • PNP. Flat with little nose or flavor. Second day under cork it opened up. Suspect this needs 3-5 more years. Subtle earth, dark cherry.

  • Nose: The nose is understated and nuanced with raspberries, earth notes, leather, some wood spices, sour red cherries, and a touch of dark red florals. The nose is balanced with nice depth and perfume, though there is a primary quality to it.

    Taste: Medium bodied with medium+ acidity and medium tannins. The feel is refined with youthful tannins backed up with sour red cherries, raspberries, dark red florals, leather, and wood spices.

    Overall: This is ready to drink if one prefers their red burgs on the more primary side. For me, it hasn't fully arrived yet. Some of the wood blows off with air, so, it may well integrate, but more than that needs to come into place before this turns into something really good. It's quite enjoyable right now, though it feels like it has room to improve.

  • Ruby color. Nose of anise, mulberry, iodine, alpine flowers, stone. Sharp, linear flavors of raspberry, cranberry, black cherry, brambles, stone, and earth. Bright acidity and firm tannins, leading to a medium length finish of red fruit, schist, and grip. Nicely done and capable of aging for years.

  • Not exciting but balanced initially and featuring comforting tannins. Seemed to tire rapidly over the next day or two, rather than develop in any interesting way. Drink very cool with food - at its best this way.

  • Drank over two days, Very enjoyable bottle. Cherry and mineral notes; the palate is intense with good mid palate yet light at the same time. Drinks well not but no need to rush.

  • Tight at first, did a splash decant. Smoky nose, black cherry and coffee, ripe with a long finish. Touch of tannin, could use a few years, but I enjoyed. B+

  • Good color, a touch of fading. The nose is a bit light, but shows aromas of red cherry, spice, earth, raspberry and a hint of flowers. This is medium bodied on the palate, with good concentration but a slight lack of finesse. The medium length finish shows some rustic tannins. Drinking well now.

  • Opened a couple hours before serving but elected not to decant. Nose effused dark berries, earth, bramble, and a dose of anise. Fruit was fresh, medium weight, almost light, but had surprising depth of flavor. This is not a soft wine, rather its acidity and tannins border on rustic, but for me was pleasurable and balanced. Paired with a ramp risotto finished with robiola and fried egg, this wine sung as the structure was needed and won over Nancy who is rusticity-averse. Could easily hold for years.

  • Dark but developed crystal clear color. Nose of spices, dried plums and general gorgeousness. Taste is powerful, succulent sweet fruit. Very balanced. Slightly drying in the end. This is wonderful! Obviously one should wait at least this long for a Pavelot premier cru. 9 years. Sigh. Cellartracker tells me I've consumed 15 litres of Pavelot earlier, and I realize now what a mistake I've done... Should have just forgotten it all in my cellar until the proper age..

  • Really lovely showing. Wide open on both the nose and the palate and this wine has moved into its secondary phase. Beautiful perfume and a good density. Lots of flavour and complexity.

  • Fresh and pleasant nose. Fruity and harmonic. Leather and dust on the nose. More of a nebbiolonose than a pinotnose.

    Spices and fruit fills the mouth. Splendid balance with a slight overweight of tannins in the finish. This wine has grown considerably since I tasted it last time a year ago. The concentration is greater and he maturity has surely evolved. Classical pinot, this is. Lst bottle has to be saved for a vertical tasting in perhaps 5 years to make it shine the way it deserves. Good match to the Hobbit on DVD.

  • Still incredibly primary, bright fruit a bit darker than recent vintages of this wine have come across to me. Very nice wine, will attempt to hold remaining bottle for a few years to see how it comes along.

  • Decanted and put back in the cellar for an hour. Dark ruby color. Nose of blackberry, raspberry, earth tones, licorice, violets. Structured and rustic on the palate but after decanting much more accessible, showing black raspberry, mulberry, and lots of anise. Quite a nice balance between powerful tannins, ample acidity, and primary brambled fruit. Echoes of dark plum, stones, and iron on the long finish. Very young but giving a lot of hints as to its ultimate enjoyability. Wait another 5 years at least for the next one. From a 375.

  • At The Sun Inn, Dedham £45 off the list. Nose is relatively youthful, with dark cherry and plum fruit, slight earthy and mineral edge. Medium/full bodied, dark cherry, black currant fruit, notes of iron and blood, tannins are fine but still firm, not really noticeable but just detectable and just reining the wine in still, decent fresh acidity on the good length finish, just showing an occasional gamey note. An excellent Savigny, give it another 3-5 years to allow it to start to show its best.

  • Litt skuffet over denne, men så ble den også drukket etter en Serafin Gevrey fra 99 som virkelig var flott. Har lite notater, men ser at jeg finner den noe rustrød i kanten, men mørk farge, både dype kirsebær og neon lysere toner av rips. Relativt kraftig vin som ville taklet mye av mat -- la det være formålet neste gang.

  • Pop and pour, put the rest on a decanter. A clear warm red colour. Bouquet developing over half an hour into a pure flowery nose with slight hint of some very enjoyable spice or herb, magnolia? This spicy sensation later turned into a sliver of greenness, but it didn't ruin the experience. Decent depth and concentration, though I honestly expected more from this one. Quite nice, but last two bottles will rest for at least 3 years.

  • Started off very tannic and difficult, but 30 minutes in the decanter were sufficient to bring it back to its normal, velvety texture. Cola, sour berries, spices. Average + length and great pleasure to drink, this has the x-factor. Bottle was empty before the kids went to bed.

  • Sacrificed just to get an idea of where it is. Opened and begun almost immediately, despite knowing this would not show to its best on short notice. The nose is dark and quiet, somewhat brooding, hinting at considerable concentration, though reluctant to fully reveal it. Equally dark and with an introverted intensity on the palate. Blue and black fruits with flashes of spice and wood-smoke. At moments appearing ready to reveal itself only to step back behind the veil. Excellent class and balance. Captures the attention and frustrates a bit, some kind of corner of the eye phenomenon, something that disappears when you attempt to look straight at it.

  • Very nice, fresh and fruity nose, with loads of fresh spices and a typical pinot character. Mouthfeel is round and fresh, length is above average. Much better than Les Guettes at this point in time.

  • From 375mL. The wine appears youthful, from a moderately intense blue ruby core transitioning to blush salmon rim. Very fine sediment settled to the bottom of the glass within 20 minutes of being opened. On the nose the wine is understated; slowly gained momentum over the course of two hours with amarena cherry, bell pepper(?), pheasant guts, wet leaves and a quiet, toasted sous bois note. The oak is very well integrated though I would surmise that this wine saw very judicious oak aging. The palate is lengthy, structured and full, yet elegant and floral. Bright acidity, silken tannins and medium intensity fruit are balanced by comfortable alcohol. The aromas of dark red fruit, mushroom mingle with the slightest hint of baking spices leading to a taut minerality cushioned by soft leather and blood notes on the tail. Very wonderful, lots of potential to evolve beautifully. Buy it up, cellar it properly and drink over the next 5-7 years.

  • Ripe and sexy, the most complete wine with the best terroir. Buried spice, dark fruit, great palate concentration and a seamless transition from first sip through the crunchy mineral finish. Best wine of the group but only barely beats out the 06 Chandon de Briailles Aux Fourneaux.

  • From a 375. Brilliant ruby hue. Multi-layered nose of sous bois, cranberry, dried cherries, cinnamon, and licorice. Taut and nervy on the palate with pointed layers of cherry, red plum and mineral flavors energized by racy acidity. Tannins chewy and fine-grained, finish was precise and etched. Terrific drink now, with great promise for the future. A toast to our big orange cat. Farewell, old friend.

  • I continue to love 2006 red burgundy. Pop and pour - greeted by red Twizzler's licorice (not candied though, if that makes sense), soaring cinnamon spice, sous bois and a lifting/cooling minty note as you finish inhaling. You take a sip and the elegant, lacey red fruit reminds me more of Chambolle than "lowly" Savigny les Beaune - gaining in intensity and flavor. Nothing rustic about this - the whole package from bouquet to finish is beautiful and precise. What a treat.
