Saturday, November 21, 2020 - I've been drinking through my Sauternes lately thanks to Coravin. Interestingly enough, I selected the 2007 tonight instead of the 2005 because when put side by side, the color on the 2007 suggested it was more mature (deep golden, caramel color). The 2005 is still pale yellow and that tells me it is on a slower evolutionary path. A small glass of Doisy Daene is a great way to end the evening.
