All Sauternes, All Night (R & G Lounge, SF): A nice warm up to the night. A bit of green-herb-vanilla characteristic of American oak, but obviously doesn't see any of that. Fresh squeezed orange, a little marmalade, lighter botrytis spice, a bit of menthol that I've never had in Sauternes before. Lighter-medium bodied; fine boned. Doesn't quite have the wow of some of the later wines.

All-sauternes dinner; 12/2/2023-12/3/2023 (R&G Lounge, San Francisco): From 375mL. Aromatic, honeyed white flowers, slight mint and herbal; balanced, sweet but balanced, elegant, white flowers; finish is medium to medium-plus. I like this more than my previous bottle from 2020. 90 Day 3: Still nicely balanced with more tropical fruit, pineapple. Lovely sauternes, but definitely an unfair comparison with the other wines we had on the table.

Opened alongside an otherwise similar 2016. NOSE: dried mushroom, sultana, roasted meats, citron, candied orange peel, mature fig. MOUTH: gathered, impacted sweetness gives shape to savory spice and woods. Entombed mineral bitterness levers up its appetite stimulation.

PnP. Properly deepened colour consistent with the age. Scent of honey, marzipan and dried apricots. Elegance and harmony, and suitable to drink with a range of dishes. And on its own, of course. Delightful and excellent.

Nice showing, color is definitely mature, orange color, a little light Dust flavor, honey, slight plastic pool toy, cantelope, hint of pineapple, slight lemon zest, orange zest. Quite nice, but still lacking a bit of weight. The orange zest was especially nice.

Almost an Armagnac color. Amber brown. More floral than fruit. Honey suckle, bergamot tea, overripe apricot, pineapple, good acid on palette. More herbal than fruit and plastic pool toy. Some orange zest bitterness on palette. I am surprised that is not very viscus. A bit disappointed with the short finish. Nice wine though.

Big improvement on the last half I had of this in 2015. Big botrytis nose with plenty of barley sugar and apricot. Great power and intensity now. Seriously good Sauternes with cream, apricot and more barley sugar flavours. Superb.

14% alcohol. Perfect cork giving a promising smell. The colour is rich gold. The nose has gorse and mirabelle plum. Mouth filling but not over rich, even slightly light weight, but not in a negative way. Finishes on an upward elegant note, confirming my impression that the wine was not chaptalised. I stopped buying Sauternes a good few years ago, but I am glad to have a reasonable number of these bottles in the cellar.

I've been drinking through my Sauternes lately thanks to Coravin. Interestingly enough, I selected the 2007 tonight instead of the 2005 because when put side by side, the color on the 2007 suggested it was more mature (deep golden, caramel color). The 2005 is still pale yellow and that tells me it is on a slower evolutionary path. A small glass of Doisy Daene is a great way to end the evening.

From 375mL. Golden; medium intensity aromatics, white fruit, some baking spice; medium bodied, sweetness still present with medium acidity, fruit more reticent, slight alcohol showing, fruit and secondary complexity doesn’t persist through the mid palate; short-medium finish. Not a bad Sauternes, but not remarkable either. I will wait a few years on my last half bottle. 88 Day 2: No improvement, and if anything less complex today. Unsure if this will improve from here, but hoping this is in a more reticent phase. 87-

18k gold with polished brass highlights. Candied pineapple, bruleed sugar, dried honey and apricot on the nose. Very round and thick and unctuous on the palate. The flavours are more on the barley sugar, lots of botrytis spice, dried apricot, candied pineapple and buckwheat honey. Good sharp acidity that balances the sweetness nicely, but not quite enough to completely cleanse the palate. Still, it finishes light on its toes and has a very long finish. Very good!

Dark yellow, coats the tongue, full tropical fruits flavour, definite element of banana. Beautifully balanced acidity. Keeps well once opened. No sign of age apart from the colour. Delicious.

Wow, this was in a flat-out awesome spot. The nose is powerful right off the initial pop-and-pour; jackfruit, mango, fresh white mushroom, mint, apricot, candied ginger, lemongrass, and a hint of sawdust. The palate is explosive, repeating everything on the nose and more. I loved this wine and really love this vintage for sauternes. The botrytis is quite subtle which held this back just a touch for me.

Small Sauternes 2007 tasting - all from half bottle. Doisy Daene, Lafaurie Peraguey, Rieussec and Suduiraut. DD and Rieussec lean expression. All very good. DD seems the "winner", lots of richness, taste, sweetness, exotic fruit and very well kept up with good acidity and a lean expression.

Similar tasting note to the one I wrote in March. Great Sauternes, but this time it was more viscous and thick. I truly believe food, time of day, amount of sleep you've had and how much wine you have consumed has a big part to play in what we call "bottle variation". We might need to name it "palate variation" which influences our potential bias. Nevertheless, this is a great value Sauternes.

Much more evolved that the last time I had it only six months ago (see note from Oct. '15). Seems to be on a fast evolutionary track. Ironically, I pulled both an '05 and '07 out of the cellar at the same time and elected to go with the '07 because the color was a deeper golden caramel. Why more evolved? I don't know. They are both from the same cellar. Liquid honey and apricots in a glass. Lots of botrytis and a long finish.

Honey, custard, pineapple, smoke, minerals, citrus, a hint of melon, some brown sugar, and vanilla on the nose. Honey, spice, some light citrus, stone fruit, pineapple juice, minerals, and some smoky, earthy hints on the palate. Refreshing acidity, long delicious finish, nice complexity, light-medium body. This was really nice. There was a lot going on without being syrupy or cloying. Should be fun to follow for several years.

An elegant & balanced Sauternes... Surprising how good this is at this age. Light on its feet, honey coated apricots laced with crushed quartz rock. Great nose and elegant finish. Not syrupy and extracted like some of the Barsac botrytis whites.

Drank over the course of three nights. On the first night and second night, it was a pleasant enough tipple but the 'coarse' descriptor that somebody else used here was very apt; the alcohol felt a little obvious plus it seemed like it was lacking depth. The third night was an enjoyable surprise as the wine was finally showing some real complexity. The borderline cloying apricot notes of the first two nights started to unfold and show pineapple, brown sugar, white peach, and an impression of pleasantly bitter honey with a medium length finish. Because of this, I suspect it's still too early to really consider this. Perhaps another 5 years of waiting would be advisable. One nitpick: there was a suggestion of matchstick that came and went throughout my consumption of this bottle. If you are sensitive to sulphur faults, this may ding the wine a few points in your book. Regardless, it's an excellent Barsac and good value.

Full-on botrytis nose, with lots of glue, honey and somewhat heavier marmalade aromas than the more decidedly elegant Suduiraut. Full-bodied on the attack and midpalate, but shorter and lighter on the finish, hasn't got the length of the more expensive competitor. But at half the price of Suduiraut, still a nice and typical (fullness) glass of Barsac.

Medium sweetness with a generous amount of botrytis. Aromas of white flowers soar from the glass immediately after pouring with some tropical and stone fruit in the background. Nice vanilla and oak spice. Beautifully balanced finish that really complimented the rose water ice cream we ate with it. My 8th 375 and they've all been consistently great.

Absolutely wonderful. My biggest bone with Sauternes is that they're so often cloying and sweet, and I struggle to want to finish my glass. This had such great acidity and lift it was a pleasure to drink, and was even (dare I say) refreshing.

This is a big, botrytis filled wine that certainly isn't bashful. What it lacks in finesse it can make up for in raw power, if you're into that thing. I'm not sure this will age more than a medium length for a Sauternes though, as the acid seems a bit low to go the distance.

Let me start off by saying bottle variation? I had this 4 months ago and it was a lot better. The nose shows varnish, smoked pears and brown cane sugar. On the palate, this has nice viscous texture without being over the top. Tastes like dried apricots coated in cane sugar, but there's some kind of bitterness on the back end and also shows a bit of heat. Could this have gone into an awkward state in just 4 months? Just not what I remember and not I was hoping for when I popped this. It's still very drinkable and has some delicious factor going for it, but not to the level I remember it being at.

from 375 that shipped the previous day....served a bit colder than it should have been been (fridge temp) and consumed over an hour. I was surprised by this wine. The light color belies a bit of heft. Flavors are more caramel and sugar than tropical or candied fruit. The most surprising aspect for me was how overt the oak was. I realize this is just a baby, but it is gonna take a while to knit this together IMO. Also missing was the acidity. Again...tasted coldish, so take it with a grain of salt.

Decanted for one hour. Shiny, light-medium gold color, high viscosity, no tartaric crystals at the moment. Loads of botrytis on the nose followed by intense fruit in the lines of apricot and melon. Medium weight on the palate and quite sweet for such a young Sauternes, balanced but could have more acidity. Long finish shows the underlying backbone of sweet oak and acidity. Already a pleasure to drink but has great potential. 92++

Rich Golden colour with a really waxy Sémillon nose. The palate is really fat on the front and as it lingers the acidity seems to almost cut its way out and builds onto the finish. Flavors are bold but I find them one dimensional. The major redeeming quality is the wonderful floral character that explodes and carries the sweet fruits along the long finish. Full body, well balanced. Excellent Quality. Drink now - 2025. I was expecting something a bit more delicate, still delicious. Just not what I would term "Outstanding"

Very sweet, but not flabby, there's underlying acidity and nice botrytis on the finish. Absolutely delicious, but slightly less my style than the '07 Vedrines, which has more acid and less sugar.

Delicious. Colour is very pale for a Sauternes, staw and lemon. Mineral nose, palate of green apples and pineapple. Excellent finish of brown sugar. I love Sauternes and am very impressed with this, especially as this wine had to work hard to overcome my skepticism of the very pale colour.

Union des Grands Crus de Bordeaux 2007 Tasting (The Annex - Hollywood & Highland): A very subtle and attractive bouquet of white flowers such as honeysuckle, pear, and honeydew. Exceptionally sweet and spicy on the palate with flavors of pineapple and apple pie through the long finish. This is solid in a sweet glossy style that is very attractive if a bit over exuberant.

UGC 2007 Bordeaux (The Drake, Chicago IL): nose: real tart nose of green apples, tart citrus tones, honey and melons. Real nice and tart on the nose with really good depth
taste: great medium feel with good medium+ acidity and delicious tones of green apples, tart citrus tones, and a lot of honeydew melons

I've been drinking through my Sauternes lately thanks to Coravin. Interestingly enough, I selected the 2007 tonight instead of the 2005 because when put side by side, the color on the 2007 suggested it was more mature (deep golden, caramel color). The 2005 is still pale yellow and that tells me it is on a slower evolutionary path. A small glass of Doisy Daene is a great way to end the evening.

18k gold with polished brass highlights. Candied pineapple, bruleed sugar, dried honey and apricot on the nose. Very round and thick and unctuous on the palate. The flavours are more on the barley sugar, lots of botrytis spice, dried apricot, candied pineapple and buckwheat honey. Good sharp acidity that balances the sweetness nicely, but not quite enough to completely cleanse the palate. Still, it finishes light on its toes and has a very long finish. Very good!

Wow, this was in a flat-out awesome spot. The nose is powerful right off the initial pop-and-pour; jackfruit, mango, fresh white mushroom, mint, apricot, candied ginger, lemongrass, and a hint of sawdust. The palate is explosive, repeating everything on the nose and more. I loved this wine and really love this vintage for sauternes. The botrytis is quite subtle which held this back just a touch for me.

Small Sauternes 2007 tasting - all from half bottle. Doisy Daene, Lafaurie Peraguey, Rieussec and Suduiraut. DD and Rieussec lean expression. All very good. DD seems the "winner", lots of richness, taste, sweetness, exotic fruit and very well kept up with good acidity and a lean expression.

Similar tasting note to the one I wrote in March. Great Sauternes, but this time it was more viscous and thick. I truly believe food, time of day, amount of sleep you've had and how much wine you have consumed has a big part to play in what we call "bottle variation". We might need to name it "palate variation" which influences our potential bias. Nevertheless, this is a great value Sauternes.

Much more evolved that the last time I had it only six months ago (see note from Oct. '15). Seems to be on a fast evolutionary track. Ironically, I pulled both an '05 and '07 out of the cellar at the same time and elected to go with the '07 because the color was a deeper golden caramel. Why more evolved? I don't know. They are both from the same cellar. Liquid honey and apricots in a glass. Lots of botrytis and a long finish.

An elegant & balanced Sauternes... Surprising how good this is at this age. Light on its feet, honey coated apricots laced with crushed quartz rock. Great nose and elegant finish. Not syrupy and extracted like some of the Barsac botrytis whites.

Drank over the course of three nights. On the first night and second night, it was a pleasant enough tipple but the 'coarse' descriptor that somebody else used here was very apt; the alcohol felt a little obvious plus it seemed like it was lacking depth. The third night was an enjoyable surprise as the wine was finally showing some real complexity. The borderline cloying apricot notes of the first two nights started to unfold and show pineapple, brown sugar, white peach, and an impression of pleasantly bitter honey with a medium length finish. Because of this, I suspect it's still too early to really consider this. Perhaps another 5 years of waiting would be advisable. One nitpick: there was a suggestion of matchstick that came and went throughout my consumption of this bottle. If you are sensitive to sulphur faults, this may ding the wine a few points in your book. Regardless, it's an excellent Barsac and good value.

Full-bodied on the attack and midpalate, but shorter and lighter on the finish, hasn't got the length of the more expensive competitor. Medium sweetness with a generous amount of botrytis. Aromas of white flowers soar from the glass immediately after pouring with some tropical and stone fruit in the background. Nice vanilla and oak spice. Beautifully balanced finish that really complimented the rose water ice cream we ate with it. My 8th 375 and they've all been consistently great.

Absolutely wonderful. My biggest bone with Sauternes is that they're so often cloying and sweet, and I struggle to want to finish my glass. This had such great acidity and lift it was a pleasure to drink, and was even (dare I say) refreshing.

Let me start off by saying bottle variation? I had this 4 months ago and it was a lot better. The nose shows varnish, smoked pears and brown cane sugar. On the palate, this has nice viscous texture without being over the top. Tastes like dried apricots coated in cane sugar, but there's some kind of bitterness on the back end and also shows a bit of heat. Could this have gone into an awkward state in just 4 months? Just not what I remember and not I was hoping for when I popped this. It's still very drinkable and has some delicious factor going for it, but not to the level I remember it being at.

Decanted for one hour. Shiny, light-medium gold color, high viscosity, no tartaric crystals at the moment. Loads of botrytis on the nose followed by intense fruit in the lines of apricot and melon. Medium weight on the palate and quite sweet for such a young Sauternes, balanced but could have more acidity. Long finish shows the underlying backbone of sweet oak and acidity. Already a pleasure to drink but has great potential. 92++

Rich Golden colour with a really waxy Sémillon nose.
The palate is really fat on the front and as it lingers the acidity seems to almost cut its way out and builds onto the finish. Flavors are bold but I find them one dimensional. The major redeeming quality is the wonderful floral character that explodes and carries the sweet fruits along the long finish. Full body, well balanced.
Excellent Quality.
Drink now - 2025.
I was expecting something a bit more delicate, still delicious. Just not what I would term "Outstanding"

Pale yellow. Explosive nose of honey, peaches and pineapple. This tastes lush and decadent, full of candied peaches and tropical fruits. Very sweet, but not flabby, there's underlying acidity and nice botrytis on the finish. Absolutely delicious, but slightly less my style than the '07 Vedrines, which has more acid and less sugar.

Union des Grands Crus de Bordeaux 2007 Tasting (The Annex - Hollywood & Highland): A very subtle and attractive bouquet of white flowers such as honeysuckle, pear, and honeydew. Exceptionally sweet and spicy on the palate with flavors of pineapple and apple pie through the long finish. This is solid in a sweet glossy style that is very attractive if a bit over exuberant.

taste: great medium feel with good medium+ acidity and delicious tones of green apples, tart citrus tones, and a lot of honeydew melons
overall: A really good young sauternes. Has a more forward and tart profile, but its well balanced and deep
