Saturday, March 25, 2023 - Baking spices, pineapple, damp mossy rocks, and red apple skin in beautiful delineation on the nose. An absolute firework display on the palette. Baking spices first, then more of a baked pineapple, like a pineapple tarte tatin, also with vanilla custard. A lovely tart bitterness on the finish. Great purity.
