One hour slow oxidation. Pours a brilliant medium gold. Inviting aromas of spiced, poached white pear, honeysuckle, lightly pickled ginger, a feint touch of honey, damp stones, quince, and orange oil. Ultra-concentrated, waxy yet silken - the palate is a dense, powerful delight that finishes with a touch of phenolic bitterness akin to grapefruit pith.
Baking spices, pineapple, damp mossy rocks, and red apple skin in beautiful delineation on the nose. An absolute firework display on the palette. Baking spices first, then more of a baked pineapple, like a pineapple tarte tatin, also with vanilla custard. A lovely tart bitterness on the finish. Great purity.
