Thursday, August 7, 2008 - Popped and poured a taste before decanting. Very tight out of the bottle, showing pencil shavings, earth, unsweetened chocolate and a hint of the fruit that is to come. A fair amount of sediment in the bottle.

Decanted for about an hour. Black cherry, raspberry, a bit of spice (anise?) and dark chocolate on the nose. The flavors are fantastic and very well balanced - plums, black raspberry, dark chocolate, a bit of earthiness and some tannins on the finish. This paired very well with rib eye steaks (no surprise).

Day 2 (only one glass remained) this is still showing well. The fruit has diminished a little, revealing a touch of oak and alcohol - - both of which were completely integrated yesterday.
