Monday, September 27, 2021 - Opened and decanted for about 2 hours before diving in. Nose was incredible from the jump, so very little hesitation. Bottle had been standing for a couple months and the normal monster amount of sediment with these bottles was nonexistent, made me a believer in that methodology. Drank over about 3 hours. In the glass crimson with some almost purple flashes, really not looking it’s age at all I thought, especially in comparison to other bottles in the past. Nose provides cedar, cigar box, ripe blackberry, plum, dark cherry, green pepper, graphite and pencil lead. Mouthcoating on the palate with layered fruit and earth flavors complimented by further tabacco notes. A touch of green pepper, but never off putting and balanced against some sweeter cherry. Lingering finish, one of the best 05 Delectus bottles I have had.
