Friday, October 7, 2022 - It is always with fear I open one of these bottles. Previous experiences with premox are the reasons for this. But the, how satisfying it is to find a perfect example at the perfect age for this wine: 15 years. Clear straw color with hints of green. Very young. Classic nose of green apples at first, then the underlying sweet, almost tropical fruit (peach and lime), all topped with a hint of green olives and chalk. Medium to full bodied attack, smooth mouthfeel, and an almost buttery consistency on the palate. Then a searing acidity kicks in, leaving the finish on citrus, green apples and lime. Extreme length, sits for well over one and a half minute and develops fine mineral/olive tones all the way to the end. Not the expansive Burgundy a la Meursault, more like an elegant Chablis. This is just a top wine, but it is still too young. Believe me or not!
