However, this wine, though overly bitter upon opening, has a redeemingly full mouthfeel and welcome acidity. The bitterness dissipated over the course of 2 hours, though never really disappeared.

night two: this has lost the bitterness and gained some herbal elements. Unfortuntely, it has just started the oxidization process. You just can't win 'em all.
