Sunday, December 31, 2023 - Cracked a bottle to usher in the new year. Decanted for 4 hours ahead. The fresh pour felt reserved albeit extremely complex, and definitely gasping for air. Loads of savoury cured meat, tapenade, umami bacon fat, creamy oak, cracked pepper, violet, laden with blackberry, plum and boysenberry. In the mouth, this packed a ton of acidity and weight, and following through to a powdery fine finish. This is probably half way through its development, got a good mixture of primary and tertiaries going.

6 hours later, BAM, lights out, fresh violets and blackberry in full bloom.

All this needs is more time to develop.
