Wednesday, February 21, 2024 - PnP, brought to Rich Table (a real wow restaurant). The softer side of nicely aged Chave. Not epic but absolutely lovely and a graceful complementary dancing partner to every dish. Truffle pasta? Sure. Trout with chimichurri sauce? No prob. Crab Thai spice salad? Pirouettes. Ribeye - well, yes of course.
Fundamentally Chave. Delicate, rich, resonance. classic, well proportioned, well balanced. Gorgeous savory notes on the nose and palate but still plenty of red fruit fading in to a tart biting finish. In a very good place indeed.
