Thursday, September 7, 2023 - OMG. Beautiful color especially for its age, like my wife of 43 years. I like old champagne with a little oxidation. Needed to be cooler for the first glass. Drank over 7 courses at Kasama here in Chicago. Developed more strength in the glass. Lemon for sure with a little sherry hint on the finish. I described it better while drinking it. Wife says drink, I say can wait 5 years. Must drink with food. Not a P&P. Hold. Will visit the winery at the end of the month.
