Friday, May 14, 2010 - Simple Series IV: Dave's Birthday (Victoria Peak, Orchard Central): Really excellent. This was a serious Champagne. Golden yellow in colour, bead had faded somewhat. Took awhile to take off, but after some 15 minutes in the glass, the nose showed a panoply of aging Champagne aromas - umami-laden Chicken-in-a-Biscuit cracker scents, deeper chicken stock notes, truffly earth, slightly browned apples, kumquats, a hint of high-toned flowers, yeast, and a gentle nuttiness in the background. Very nice. Palate was amazingly youthful, even a bit tight on the attack at first, showing primarily the clean, minerally backbone of the wine. With time, it opened up into layered white meat and white fruit flavours, a touch of peach at the edges, some lemons, all laced with great freshness and held up by a firm, but very finely chiselled sense of structure. Still tight, but very noble, very masculine I thought, with tons of cut and finesse. Finish had just incredible length, with tons of minerality, and profound depth, with more chicken essence, lemons, mushrooms and pinpricks of spice just going on and on in the mouth. A superb Champagne, with plenty of room to go, we caught it just as it was coming out of adolescence into maturity I think.
