Saturday, November 6, 2021 - Opened last night and it’s simply too old. Left the bottle in the frig overnight, less one glass, and it’s transformed. Not a premox bottle, at 39 years, but rejuvenated in a similar way. Dark golden colour, nose of roasted pineapple and toffee. Palate is similarly rich but held in check by a lick of salinity mid palate and a nutty/honeycomb finish. Needs food, and improves with air in the glass. Almost Sauternes-like richness. A half bottle in the frig for tomorrow.
