Friday, February 14, 2014 - Decanted for about an hour and then consumed over about an hour and a half. Evolved over that time but pleasant at all stages, including right out of the bottle. Drinking well now but no rush - lots of life left. Very typical Paulliac, subdued fruit, well integrated, good length. Great match for a rib eye roast.
