Tuesday, May 20, 2008 - Very good, started with vegetable notes, a touch sharp/hard with tannin, but not a lot of structure. As the meal (steak) progressed, the wine softened markedly, and showed nice fruit and a lovely silkiness. Surprisingly, the wine also complemented the whipped parsnips. Half the bottle reserved for tomorrow night to see how it evolves.
