Thursday, November 30, 2017 - This may not be the pinnacle of Inisgnia and we may have opened it up 12-18 months early, but it still was an incredibly delicious wine after 90-120 of air in a small decanter. Paired with short ribs, starch and caesar salad. It had tar and leather, with some deep red berries, but no earth and no additional complexity. It was still fairly wound up after 2 hours, but definitely at it's best.
