Friday, January 8, 2016 - Just delicious. Much richer than the last time I had this. Very robust nose full of green and stone fruits and heaps of lovely biscuity yeastiness. It's very much like and orchard and pastry shop in the same room. There is finesse here, though. Well structured palate with a nice tension from the acidity in the middle palate and very long finish. The mousse is still slightly rustic for me, however. Finer bubbles and this would be a true star.
