Last of a six-pack and this has matured quite a bit over the last year. Melon, oyster shell and oyster meat, with a bit of butter. Not really shedding any tears over this being the last bottle. Nice, but freshness hasn`t really been substituted by complexity as this has developed.

Some pineapple and melon aromas on the nose. Medium bodied, dry, a litte tight and acidic, delivering clean typicity flavors likewise the nose and hints of minerality. A clean and pleasing young chablis. Currently a little restrained but has a promising future.

Clear, med(-) intensity lemon color. Clean, youthful nose is more restrained than the fourchaume, showing medium(-) intensity aromas of lemon, green apple, and a more restrained mineral note. Dry palate shows medium(+) acidity, medium(-) body, and medium intensity flavors of lemon, marshmallow, and nutmeg. Medium finish is acid driven. Excellent quality. Will improve over 3-5 yrs and drink well for a while.

Under advise decanted and started to drink it after 1/2 hour.
Taut and fresh, initially very limey and zesty, developing in the mouth into lemon. It relaxed somewhat during the bottle, but was still very steely. Built well in the mouth some chalk/seashell on the nose. What little the wine opened up revealed herbal hotes and fresh taut lemon. Very focussed in the mouth with lively minerality. Long length. Very good potential. Went surprisingly well with my Venison Carpaccio.

(From memory) Pale yellow with a strong green tinge. Complex nose of lemon, minerals and some soil undertones. Rich round but not entirely fat. Tasted of pure Chardonnay juice. Finished with great saliva inducing acidity.

Chablis and Champagne 19-22.09.2011; 9/19/2011-9/22/2011: 40% barrel fermentation. Hint of SO2; otherwise quite oaky scent with an almost buttery/caramel edge. Generous ripe oaky entry, more caramel (I might have guessed this as a thin Côtes de Beaune somewhere between Chassagne-Montrachet and Meursault if it wasn't for the slender Chablis body), good balancing lemon acidity. Medium-long finish. Fine now and for at least another 5 years. €25,40 au chai. 89P(+)

Grand Tasting - La Paulee de San Francisco (Westin St. Francis - San Francisco CA): Slightly floral start with fairly ripe and forward apple and lemon aromas. Ripe textures and flavors, with a clean citrus finish. A good young drinking Chablis 1er, even if showing more 2009 than classic Chablis character.
