  • Very special champagne that came from Hol's father. Dark golden hue with no bubbles. Originally thought this bottle was shot-- but then I tasted it. What a miraculous bottle. Despite having very little effervescence, this turned out to be a charm. Caramel was the first taste that came to mind. After opening, it turned to tart lime with a hint of cinnamon. This juice kept on changing and I was loving every minute. Glad to have had this bottle for a lot of reasons and glad to have shared it with friends.

  • This was a fun treat. Poured a fairly dark golden color. Not much in the way of visible bubbles, but there was some light tingly effervescence. Initially, brown sugar and caramel dominated. The wine continued to evolve and open, and regained life with air. It picked up some tart lime and citrus, cinnamon and complexity as it went. Plenty of acidity. It paired well with everything at the table. I really enjoyed this, and experiencing how it changed with air. Thanks to Holly and Tony for sharing. It came from Holly’s dad’s collection.
