The nose is also dominated by primary fruit tones, mostly citrus like lemon, lime and grape, underlined by a clear chalky tone. Tight attack on the palate, high acidity, citrus fruit dominates the mid palate while some green apple tones emerge on the tight, chalky and fresh finish. Long aftertaste. These wines are not easy to like, and they evolve incredibly slow. When this wine will reach it's apex - if anytime - is impossible to know. However, this was my last bottle so I'll probably never know.

A tasting of three grand crus (clos, preuses, vaudesir 2010) and two 1er crus (montee de tonnere and vaulorent 2012). This is still too young. Marked by a reductive note of flint and matchsticks when opened, less so than the other wines though. Giving way to apples, licorice, mint and chalk when it warms up. Medium bodied attack, fine fruit on the mid palate reminiscent of green apples, lemon and mint. Some tannic feel at the end, and a fresh finish. Somewhat short compared to the Montee de Tonnere, but much easier to drink at the moment. Almost mature.

I have been skeptical towards the wines of Fevre for quite some years, so I stopped buying them. Thankfully, I saved some of the older wines, for instance this Vaulorent from the good to excellent 2012 vintage. The cork is incredibly long. Very light straw yellow, almost blank, but with streak of green. Very young appearance. Given the fact that Fevre uses old barrels, the nose is fascinating reminiscent of new oak: vanilla and some honey. Then the Chablis terroir kicks in: green apples, dust, chalk. Medium bodied, very high acidity in the attack (surprise!), lots of green apples, but also with a baked tone of vanilla and cinnamon. Everything comes together in a sleak, elegant, but a bit monolithic aftertaste dominated by green apples and again that baked vanilla feeling. Citrus dominates the finish. Believe it or not, but this wine is still too young. Keep for five more years to see what happens, or drink with fine shellfish like raw scallops or crabs.

In line with the last bottle some months ago: Ripe fruit: Apple, lemon, seashells and iodine, pretty salty, excellent length and tension. Still on the younger side and no risk anymore for premox with the DIAM corks they use since the 2010 vintage. Fevre produces in general bone dry, crystalline and straight wines. Not everyone’s favorite, I suppose, but I admire them.

Blind, lemony, mineral zesty white reminds of Chablis which it was. Not much on the nose, quite tight, good freshness. 24 hours later, chalk, crushed stones, yellow apples and peaches, completely opened up. It’s growing on me. Will easily hold a decade. Wait a few more years before popping corks.

Dense, saline and medium fruit. Still compact but long finish. Only just starting to develop. Still has years ahead. Would wait to 2022/23 before opening more. Best Fevre premier cru I’ve had in years.

Even better than last year. Chablis at its best. minerality, lime, green apples, but also some classical chardonnay buttery, oaky notes. Long, balanced and very drinkable. Grand cru level.

Tasted over 3 hrs, extra long Diam cork -translucent nearly iridescent pale gold green -reduction layer over intense lemon wet stone -med+ acidity, med weight ultra concentrated sappy mid-palate loaded with lemon mineral dry extract that leaves a palpable coating, good complexity and length -intense but not harsh, another fine Fevre Vaulorent that outshines many a Grand Cru

Very nice. Citrus, minerality, but also very long with a sweeter very nice honey-like ending. Very young and primary still, and I’m sure it will be better in a couple of years.

Straw yellow colour. Citrus and minerals with hints of smoke, oysters and salt. Taste of lemon, seawater and smoke with hints of pineapple and flint. A good and complex wine that will be even better when stored for some years. Goes well with shellfish or grilled seafood.

Well made but still a bit sharp, hard. Needs more time in the cellar. The other 2012 Fevres are easier to drink. The Vaulorent benefits from a decant, with sharp lemon curd, citrus zest, vibrancy, and body. Just needs time. Try again in 2017.

PopnPour, tasted over 2 hrs -translucent pale gold-green -matchstick/reduction, intense citrus ocean -higher acidity, med weight explosively sappy intensity with focused yet quite complex citrus saline truffle elements and respectable finish -youthfully intense that is lovely now for its sheer energy and plenty of years of upside if it avoids the premox pox

HDH auction tasting at Tru; 12/12/2014-12/13/2014 (Chicago, IL): Very pale colour. Lots of flint and smoke on the nose -- not showing any fruit at all right now. The palate is quite austere as well, showing the same stone qualities, as well as a good dose of tart lemon. There is a bit of oak on show, but it isn't annoying or loud at all.

2012 Chablis at Domaine William Fèvre: Better again, to my palate, showing even more phenolic grip. Powerful, rich and concentrated, showing attractive, sparkling acidity, with good balance. The flavours were pear and citric, again with some minerals in the background. The largest scaled Chablis so far, showing excellent, quite big fruit and good length.
