After 20 years it is still nice. Color was good - very slight brown on the edge, the body was a little light and it was perfectly clear. Paired with Surf and turf it was nice - good berry flavors start to end, no real oak or vanilla like when it was young. Mouth feel was nice - easy drinking, smooth, no tannins.

Tasted this blind alongside a Brandlin '10, Peter Michael '07, and a Dunn '03. Medium ruby turning crimson at the rim with a nose of red fruits, leather and earth. Clearly this wine had received the benefit of age - and quite gracefully I might add. The palate has subdued nuances of cranberry, raspberry, dark cherry, and vanilla which have gained elegance, refinement, and complexity due to age. At the onset, the wine possessed a lengthy finish with hints of earth and dried herbs. This wine showed quite remarkably in an off vintage keeping a very good balance. Don't wait any longer. Drink now.

Paired with tenderloin medallions covered with fried egg and truffle salt. Very dark ruby - even more so than the other bottles I have had. Tannins still evident but not overpowering. Cherry and currant - typical hallmarks of Caymus. This bottle drank younger than it is. Excellent.

Was nervous this would be past it's prime. Fear not. A bit darker cherry colored than some other bottles of 00 Caymus I've had. Lots of hallmark Caymus fruit with just the right amount of tannin. We drank this bottle way too fast. Paired beautifully with grilled pork chop, roasted potatoes, and sautéed spiich. Terrific bottle of wine.

Very easy Cab. Had over course of 4 hours. Also decanted. Changed very little throughout the evening. Nice silky mouthfeel. Tannins had smoothed. Mostly earth, chocolate, some leather. Nice color. Can let this sit for awhile longer, but not sure aging will help.

2010 Simple Wine Dinner Series No.8 - US Theme (Sage @ Mohamed Sultan Rd): Alcohol : 14.3% The first cab for tonight. Quite deep aromas of tobacco, tea leave with blackcurrant liquor and sweet liquorice. A fleshy wine that is soft in structure with rich opulent palate showing lots of sweet jammy dark fruits and silky tannins for a smooth mouth feel. Reminded me of the 2007 that I drank two months ago which has exactly the same profile for early drinking because of the structure is so soft and fleshy. Alcoholic sweet finish. A typical Napa Cab? This wine has been in my mother's cellar since 2003, never cooked, but not ideal conditions either. Nose had a massive blast of cedar right after decanting. Drank after 2 hrs. Cedar still present on the nose, but some stewed plums/raisins. Way more fruit than i expected at this age, but flabbier nose and midpalate than i expected too. still, everyone enjoyed this wine. Not as good as the 99 SS i had 2 years ago.

Very delicious with classic Rutherford Cabernet flavors. Very robust, but managed to be light on its feet at the same time. Despite the age it could still use a few more years to mellow out. Great structure, will continue to drink for a while.
I had two problems with the wine. First, it was pretty harsh on the finish. Without such a harsh mid-palate I would have scored it higher. (However, it was better on day two.) Second, I don't think it justified its high price. For $70/bottle I had hoped for something more exceptional.

Much lighter than any other Caymus that I have enjoyed. After a 2 hour decant as suggested by others, the nose misled the palate, promising the richness and complexity that I love about Caymus, but delivering a much more restrained and sublte mouth feel. The weight was almost non existent and there was little if any lingering in the mouth. this is not a rich Cali Cab, but rather a subtle Caymus experience, one that I have not been exposed to before. I've reserved a reidel glass worth to try tomorrow, as others have noted a more vibrant experience the next day. One sleep will tell ...

You have to allow this wine to open up at least 1 hour, but it will continue to change over the evening. This wine showed jammy fruit in the beginning, low tannins, but a somewhat short finish. Overall, a great wine.

Opened on Christmas Day for dinner with prime rib, ham and duck. Opened only 1 hour prior to dinner. It was very slow in opening. By 4 hours, the flora attibutes improved, but still short finish. Tannins didn't show also until it opened up. Initial opening was acidic, almost flawed, but surprisingly at 4 hour had a reasonable showing of chocolate, berries, but short on finish. The lesson still is open it early to air and open. We had the same 2 years ago and it had a longer finish then. Have one more cellared for next year. Will see if it makes it that long.

Had with smoked ribs at shore with Todd & Rachel. Decanted for 1 or 2 hours before drinking -- fantastic, fruit is still there and tannins have softened. A very well balanced wine -- I would drink this up in the next year or two.

Opened this before dinner at leslie's B-day party. Also opened a 99 Fisher Coach Insignia. The Fisher won out (according to the concensus) but this was still a nice wine. It wasn't as soft and supple as the Fisher but 2000 was a tough vintage and this wine was one of the few stars.

Opened this before dinner at leslie's B-day party. Also opened a 99 Fisher Coach Insignia. The Fisher won out (according to the concensus) but this was still a nice wine. It wasn't as soft and supple as the Fisher but 2000 was a tough vintage and this wine was one of the few stars.

Provado às cegas para o GG06. Importado pela Mistral. Mais evoluído que os demais vinhos da mesma bateria. Notas de chá preto, cravo-da-índia, taninos firmes, couro, madeira, leve amargor e final bastante seco. [Talvez tenha sido prejudicado pela comparação com vinhos mais exuberantes]. (C-). Ótimo.
