Les Deux 2018 (Chez Gill): Pop and pour. Very dusty nose, and then red cherry. On the palate, good acidity, but comes off as a touch thin, with not too much flavor intensity. Not bad, but would have been much better with food...suffered by comparison to other wines in this flight.
Day 2: tasted after the Furst and Mobitz again...not a smart idea...on the palate, this shows thin, green and a bit insipid, though there is a more pronounced minerality on the nose today... However, with some mild cheddar, this shows really well!
Day 3: tasted after a 2014 Rhys Anderson valley and this shows quite well. Nose shows a hint of cola, and really nice minerality. Still a bit thin on the palate, but density seems improved relative to yesterday. Maybe just needs a few more years?

Fine wine through quite austere at the moment... the fruit is diminished, tertiary flavors are slow to develop.
