Back label says 8 months on lees in stainless/8 years on fine lees in bottle. No disgorgement info. 6.5 g/l dosage. 65% Chardonnay, 20% Pinot Noir, 15% Muenier. MLF with natural yeasts.Composite cork. Medium gold with a sparse to average fizz. Big bouquet of warm bread and apple turnovers. Even though it was somewhat petillant, the depth of flavors and firm foundation of acidity made this a delicious drop. This will rock with spicy foods or all on its own. Wine Wizards Monthly Tasting (Wine Wizards Stockton): A non vintage but the table defined the cuvee being from 2012, 2011 and 2010. A blend of 50% Chardonnay, 30% Pinot Noir, and 20% Pinot Meunier. The pinots really showed in the nose, very, very nice fruit and mouth. For me pricy at $42 but worth it if I was buying.

Great body for pairing with Thai. The little extra sweetness in the brut worked well, but it’d be tasty on its own too.
