Transparent yellow color. Rich lemony notes on the nose. Medium-light body, medium-plus acid. Lemon bar on the front, picking up sea salt mid-palate and some nice wet rocks and slate, especially through the finish. Delicious, and at a great price point.

By the glass, where the rays of sun have settled. Vivid sensation of beach on the nose with mineral notes and refreshing direct of the citrus side. Vegetable and saline on the palate with length and complexity. Certainly needed more time in bottle.

Iodine and light crushed rocks minerality greet you on opening. There's an attractive, lightly lactic quality to the nose with almond skin and a lees-y brioche, maybe a bit of yellow to red apple for fruit (but this wine isn't about fruit). The sparks really fly on the palate: I think this wine is the definition of "dry extract" - it just feels wonderfully constructed and chewy while still maintaining excellent freshness and acidity. Surprising zest and electricity for a 2015 white with a racy, near-chalky finish. Texture, texture, texture.
This has the structure to go for the long, long haul; 5-10 years easy.

TNs: Recent Rando Wines; 8/19/2020-10/2/2020: A great pairing with some Island Creek oysters to-go from Kimball House. Decanted for 30 minutes this time and it's still wound pretty tight. With time you can coax out an electric mineral and saline flavors, and it shows that slight nuttiness from the lees. Such a well-made wine, not sure this makes sense, but you can feel a craftsmanship in this wine. That being said, this is Pepiere's most structured wine; it seems poised to live a long time and has yet to reach its full potential. Glad to have more. Screaming value.

Medium yellow color. Bright and deep nose with honeycomb, quince, lime, along with salty, crunchy, sea breeze tones. Focused and brisk yet shows a honeyed, deep texture. So vibrant with chunks of lime, lemon and orange, along with limestone and wet rocks. Not super oceanic, but has such crystalline focus and precision. Lovely spot right now but I'd love to try it in another three or four years.

I swear I am going to decant this thing like 2 hours next time as once again it was closed up aromatically on opening and showed very cool and structured on the palate. But you must be patient. With time you can coax out an electric mineral and saline streak that is bounded by juicy peach and and melon citrus flavors. It becomes so giving and shows some of the lees aging with a bready-hazelnut finish. Terrific wine that goes through a kaleidascope of changes as it evolves. Great with fried chicken. Screaming value under $25.

Wonderfully refreshing with notes of oyster shell, sea breeze, and apple skin. This wine begged for raw seafood, preferably oysters on the half shell.

A Good Sunday, The Mixtape, Vol II: (Pax, Broc, Pepiere, Jadot, Hudelot, Charvin, Rouchier, L'Aiguelire): Blind: This was hard to peg. Guesses were all over the place. It was closed aromatically on opening. Slowly coaxed out sweet floral and lemon/melon citrus flavors. Nicely balanced, acidity that comes on in waves. Skilled wine-making. Terrific with the escargot and mussels dishes.
