    Served blind at non-pretentious Italian Izakaya: Ebisu Cona in Tokyo.

    The bottle had only just landed in Tokyo a few hours before, so the sediment was everywhere. Not that it bothered us in the least. There was no gritty feeling or anything like that in the mouth.

    It did take over an hour for this wine to fully open up and maybe a further 30 minutes for the cherries to come out and say: "BING!".

    But, what a wine this is! Absolutely magical in balance with firm acidity, perfect fruit, a refined medium slender body and a tannic backbone still in place. Made us think that this wine must have been a monster when it was first bottled.

    This wine will live on for many, many more years as long as the cork permits it to.

    Decant for at least one hour.
