Nose of lemon peel, beeswax, melon rind and yeast. Rich, balanced palate of citrus, peach and melon with fine mineral acidity. Long finish of spiced pear, white pepper, chalk and salt water. Good stuff.

Still quite tight but by the second glass it had opened more. Lemon and green apple is the fruit but the star of the show is a beautiful savouriness. If I had another bottle I would save it for a while. It could be a spectacular village example in a few years. It’s very good now, I’d recommend a decant though.

Pale lemon; Med+ intensity, developing secondary aromas of oak (smoke, light toast) and yeast (bread, brioche), green fruit (apple, pear), citrus (lemon, lemon peel) and minerals (flint, chalk). Dry, med+ acidity, med body, med alcohol, med+ intensity and long finish. Palate is dominated by sour green fruit (apple, quince) and sour citrus fruit (lemon, lemon zest). But there is also secondary yeast notes (sourdough, brioche, curd) and oak notes (smoke, resinous, cloves), herbs (tarragon, lemongrass, ginger) and stone fruit hints (peach, apricots). Very good, possibly outstanding if it wasn't so sour at the moment. Drink now, suitable for aging.

WSET Level 2; 8/20/2019-10/15/2019 (Leoness Cellars, Temecula, CA): Pale lemon in color; Secondary notes of cheese and pastry take precedent over the lemon and green apple aromas. Due to minimal oak treatment, the palate feels waxier and creamier than expected right after trying a Fevre Chablis. More stone fruits (peach and apricot) than green fruits, but some apple is still there. A rising acidity on the finish. A good burgundy, but the unoaked Chablis style.
