I have never had anything quite like this. On entry, it reminds me of a Sauternes but is completely dry. Because of this tomfoolery, I consider it a cerebral wine. It has moderate length, moderate acidity, but it is that unique flavor profile that keeps me coming back for more.

This wine is delicious! I didn't decant, just chilled the bottle to European cellar temperature. It has a lovely orange tint, possibly as a result of the 14 days spent fermenting along with the grape skins. Clean, almost oily mouthfeel; medium acidity and tannic presence. Aromas and flavors are astounding and complex: orange, white, and yellow fruits; white tea and honeysuckle; light notes of sandalwood; kumquat and yuzu. I like this in a Riedel Cabernet Sauvignon glass. Truly excellent wine.

Drinking nice, refreshing and faint but persistent florality. The florality really lasts on the palette. Perhaps I should say “super long finish”? Probably, one of the best S. Blancs from California. Crisp acidity and beautiful florality. Fan of both French and New Zealand style of S. Blancs. Whatever is interesting, beautiful and intriguing. *7th night. Florals have really blossomed. Roses, violets, light pine on the palette. Gained more weight and tannin. *8th night. Florals, caramel, and graphite pencil. Tannins all but disappeared.

Paired with Tilefish dumplings in shellfish broth and salsa verde. Monkfish and Sea Island rise peas with broccolini, pine nuts, and paprika.

Orange wine. Roses, violets and lychee on the palette. 2nd bottle opened. Nice bottle.

Probably, one of the best S. Blancs from California.
