I drank this on a cool, sunny evening. The cool crisp weather was a perfect foil for this lovely wine. I was reminded of dried orange peel, and crystallized powdered minerals. It was crisp, rich, full body, and lovely!

This needed a couple hours to open up, but even in its youth and in a challenging vintage, it was firing on all cylinders. Started off showing more Pinot apple, but evolved into the lemon/marzipan melange I was expected. Exceptional mouthfeel and length. No problem taking down the bottle between the 2 of us.

Straw. Nose is medium. Flavors intense. INTENSE. Floral, orange mandarin, fresh apple, shortbread, cream, yeast, finish forever. 1m+ evolution. Great with Taco Bell deluxe box and didn’t fight with fire sauce. Great time. Best punch in the mouth I’ve ever had. Can’t wait for another next year.

My second ever grower Champagne (the first being Laherte NV BdB which I didn't was think anything beyond okay), and the first to taste a bit different to a cookie cutter standard Champange. More complexity and more interesting taste profile. Pastry smell. The high percentage of chardonnay really comes through on the palate with a more rounded less angular profile. Elements of almond, cream, custard in the taste . profile. Nice

80% Chardonnay, 20% Pinot Noir from 55 year old vines in Rilly-la-Montagne.
Orange blossoms, elderflower, orange juice, autolytic yeast on the nose. Only medium intensity of aromas; but it works in an elegant, understated sort of way. Austere, and I mean that as a compliment. The palate adds a lot of fresh green herbs, cream, ripe yellow apples, wet slate and toasted hazlenuts. With a firecely high intensity of flavors, the palate is firing on all cylinders right now and stands in great contrast to the elegant nose. Finishes over a minute long, which brings back the flowers. After an hour or so open, the nose becomes a little more intense and the palate adds more autolytic yeast flavors.
Medium + body with medium + acid and a medium + mousse. Drinks very well right now; but will still be alive in 10 years. For me, I'd like to revisit it in a year.

Disgorged April 2021. A year since I had this wine, and as with that bottle, I dig how this shows, too. Lots of orange-y citrus, both the usual tangerine but also big round orange, too. Golden apple, lime and the minerality of the previous bottle, too. The sensation is akin to tasting wet rock, a slate. Gorgeous. This has a refreshing quality, the generosity of Vilmart that I love so well yet it maintains a rich, freshness that I love so much. Put Vilmart in my glass any day, for any setting, and it's like someone has poured liquid joy in front of me.

Clearly chard driven. Lemon. Honey, mild hazelnut and brioche but more bright golden citrus. Vanilla. Pear and just more lemon. Delicious. Love it. Great once it has a minute to open up and warm up. Impressed. Not tear your face acidic but flirting with it. Cream and almond.

Domaine visit. A clear step up from the Grand Cellier NV. More bitter elements, more spice, richer, riper, fine bulles, creme brules, ananas. Dried fruit on the finish. Very good.

Tasting with Laurent Champs of Vilmart (In Rilly la Montagne): Disgorged April 2021. 70% Chard and 30% Pinot Noir. Hell, I just am getting my 2016s in the US so it was cool to get a shot at taking a look at the 2017. For some of the talk that has been made about the vintage, it's not fair to assign that perception broadly. This vintage of GCdO is just fine, with spicy citrus, lots of orange, lime and a linear perception I got, meaning not so much opulent as it is focused.
