A private dinner (Noble Rot Wine Bar & Restaurant, London, UK): From a small parcel of ancient vines in Saint-Bris (which includes about 5% Chardonnay), organic viticulture, 100% destemmed, spontaneous fermentation, aged in old oak barrels for close to a year, bottled unfined and unfiltered. Salty from nose to tail, steely acidity, smooth and silky but straight as an arrow, huge minerally energy, smoke and tart citrus, impeccable varietal typicity, irreplaceable old vine concentration and creaminess, superb resonance and length. A most remarkable wine.

NOSE: Exotic weeping green drupes. Gravitational lensing is provided by a Venezuelan mesa. This feature is covered in thick vines, a protective thatch over sweet stones, intruded by flint. An amphitheater of scent. (I have been reluctant and intentional while recording this mix of topological imagery.) Symphonic. Brooding, Russian tea. MOUTH: Thick with acid. Supple, metropolitan-sized knots of sour cherries, linzer pastry, and piney mint. Glossy and punctuated. Incredibly long. Savory, cured sage stems and birch. Velar pressure produces a saturating cascade of citrus oil, as coherent and clean as it is difficult to grasp.
This wine is incredibly active. Spiritually, I find it to be strongly tonic. It’s at the peak of paleo bell-ringing technology.

Colour is yellow-gold. The nose is lovely - citrus, quite open and expressive, a mineral/stone edge. To taste, it has a lovely smokey lemon-citrus palate with light notes of delicate stone-fruit sitting behind, but providing nice support and depth. It's very long and persistent - especially the lemon flavour. However the acidity is there, but is very well integrated and mouth-watering
