It’s amazing how much this 3/21 disgorgement has changed. Right now, it’s a bit discombobulated with lots of cinnamon and nutmeg. Not my cup of tea. My conclusion is that this champagne had a really short fuse— drink on release! That said, it goes really well with the quite spicy ahi tuna poke from the supermarket! 😉 if you have any, drink now!

Disgorged 03/21. Bruised apple, baked pear, slight spice notes of cinnamon. Seems to be at least partially neutral barrel aged. The dosage is a bit high for my tastes but the bubbles are small and the fruit is savory with a medium finish. Best served cold and drinking well now. Offers a taste of aged wine but not something that will improve.

A different disgorgement date than the previous bottle I had, this one is a little tighter and focused on the palate, quince, pears, some lemon mid-palate, powdered sugar towards the finish. There’s not a ton of yeasty notes, instead it leans a little more in the fruit direction.

Delicious golden with aggressive larger bubbles. Crushed apples, brioche, lemon and some dry pebbles on the nose. The aggressive mousse continues on the palate, but works well with the good acidity. Somewhat broad, and lacking in precision. Dominant red crushed apples at the mid-palate followed by a transition to the brioche and then a distinct lemon finish. Will buy again at the same price

3/21 Disgorgement. This tastes pretty much the same as the last tasting. Apples, citrus rind, hazelnuts. Chalky minerals mid-palate and a complex white fruit richness that only deepen as the champagne breathes. Not sure it’s the same disgorgement but it’s clearly the same wine.

It’s funny how fickle champagne can be. Since my last tasting, this has changed and now the green apples dominate while the toastier notes have retreated. It could also be the weather. ;-) Still a great bottle of champagne.

Medium gold color with a fine, vibrant mousse. Generous aroma of warm banana bread, lemon marshmallow, a bit of peach. Palate is friendly, neither sweet not bracingly dry and has some leesy oxidative character that adds extra dimension and stamina into a fairly long finish. Very good for the price. 4+12+16+8= 90
Fresh cut apples, roasted nuts on the nose. The palate is fully flavored with toasty yeasty notes and more of the apples, though on the palate they have a bit of a bruised very ripe quality to me. I was waiting for a bit of citrus and brightness to pull it through to the finish, but it never quite came. A denser richer expression, for my palate it maybe needed a bit of lift. One I’ll definitely have to come back to.

Yeasty, oxidative style nose-- reminds me of Bollinger. Really fine bubbles. On the palate, it is toast, green apples, and chalk. Develops hazelnuts and more minerals on breathing. Nice long finish. This is really good stuff. Clearly spent a lot of time on lees. I'm not sure it will improve much in the bottle as it's really attractive now. This makes me miss osetra caviar as this would be the bomb accompaniment.

Superb value. Abundant medium bead. Toasty, nutty, yet with a piercing mineral core. I agree with tasters who say this is perfect for oysters. It was not bad sipped on its own either!
