This really hit the spot for the first days of Spring. I'm not the biggest sparkling wine drinker, but I like the freshness of this wine. I have three bottles, so I'll probably sit on the other two for a bit. Glad to try one of these young, though.

Beautiful silken mousse. Nose of fresh cream, choux pastry, and lemon zest. Lemon curd, creme fraiche, and lavender oil on the palate. Loads of minerality. Great wine.

Needs some air - vibrant with a fresh citrus acidity out of the bottle. Fruits unfurl after some time in glass, but likely will show much better with more bottle age.
Great start of the night drinker now, but can become much more with age.

Not so sure I'm too stoked on the track record here with some of these sparklers. This one opened up with extremely aggressive bubbles (and yes, it has been resting on its side and treated with kid gloves since coming directly from the winery, and subsequent quiet cellaring). As soon as it hit the glass, it was flatter than a starving Placozoan hit by a road roller. No discernable flavors at all. A bit of a prickly texture on the tail, but that's about it. Otherwise, it's a dirt nap zombie appetizer kind of experience.
Bright, crisp, lime driven, with good minerals and while oxidative, less noticeably so than previous bottles. This one is all coiled up at the moment. If you like that, great - it's more Cedric Bouchard than Ulysse Collin at the moment.
