DG 03/2008 Orange and lemon peel, saffron, toasted butter, bread, some pastries, salted caramel, old book, baked apples, peaches, pepper, ginger, some oxidative character, beef broth, some nuts, umami. Very dense and velvety texture, joyful acidity makes the wine very dynamic. It's so good, a very pleasant moment to have it. 94pt

Poor Excuses (Taberna Palo Cortado - Madrid): Oldie and over-the-hill for some but pure delight and elegance to me. The strength of the bubble has already passed and now it is compensated with honeyed pastry notes along with rotten jasmine flowers. On the palate it is a bit short but with a dense texture but well balanced by a surprising acidity. Delicious aftertaste. By comparison I prefer my last 2004, more vital and profound.

We always enjoy Robuchon - anywhere in the world - but Hong Kong remains special with people we know and who know us, stunning execution of Robuchon's best dishes and a wonderful wine list. Dark yellow on the eye almost to the point of one wondering about the quality, but no such issue. More sharp on the nose than expected given the color and vintage. Apparently heavy representation of Petite Meunière. Bubbles quite dispersed and far from fine. Slightly sharp on the palate with a long, sour finish. I can’t say my fav, but interesting.

Medium gold in color with fine bubbles. Expressive aromas of of biscuit, bread dough, red berries and ripe apples on the nose. Big and weighty champagne in the mouth with waves of ripe pears and apples, tons of minerals and a nice yeasty and mineral note on the finish. This is drinking superbly and is all about champagne power!

Straw yellow colour. Limestone and mature apples on the nose, some lime, some rye bread.
Nice small bubbles. Nice complex fruit, mature palate mirroring the nose. Very good length on the finish. Well balanced alone, could wish for a bit more present acidity pairing it with proper food.
Drinking well now, no rush.

HDH auction tasting at Tru; 6/22/2012-6/23/2012 (Chicago, IL): A very sweet and fruity nose to begin with, slightly doughy. On the palate, this is somewhat emptier, with a very strong apple juice note. Fruity and fresh. Very easy champagne to approach. Drinking well. However, this doesn't do too well with a bit of air; it loses its freshness but doesn't gain too much from the oxidation (which isn't really my style of champagne).

2011 Masters of Wine Champagne Tasting (San Francisco, CA): Light golden color. Nice yeasty/biscuity aromas. Medium-full bodied palate with tart citrus, red berry, mineral, and caramel flavors. Overall, sharp acidity and a little bit funky with a slightly oxidative character. Medium length finish. No doubt a very nice Champagne, but with a lackluster QPR.

This wine owed a great deal of its characteristics to the preponderance of red wine grapes used to make it. The color was noticeably darker than a blanc champagne and the biscuit flavors were there but they were matched with some wonderful red berry, ripe pear and smokey tones that added great complexity and depth to the wine. Bubble size and quantity were excellent and the finish was nice and long. The wine opened very nicely over the course of 30 minutes or so and the notes apply to the well opened glass. An excellent bottle of champagne.

Tight nose but with some air, I got some gooseberries and some white flowers. On the palate, this is creamy again with some fleshy white fruit with a long finish. This is pretty good, but it'll get better.

2011 Casual Session - 10 @ ES (Extra Space Boon Keng): Alcohol :: 12% Degorge @ May-2008. Served with Riedel Bord O. 42% Pinot Noir, 29%each of Chardonnay and Pinot Meunier. This bottle is relatively austere and quite shut compared to the previous bottle. Full of yeast on the nose and display more honey, white floral and a tad steely, iron when the wine getting warmer. Lightly oxidative character on the palate which added better weight and depth. Entry is a bit sharp then rounded up a bit on the mid palate, very good balance between the lively acidity and fruits sweetness, but not really expressive in flavors. The medium length finished getting sweeter with time and lightly salted mineral that's linger. This clearly need more time in order to come out the shell. Buy - Maybe.

A toast with Bruno Paillard Champagne (Les Amis - Shaw Centre): Alcohol :: 12% Degorge - May-2008. Dosage: 5g/liter. Took 11yrs to produce. Bright golden with fine beads but not much. Different from the 1996 BDB and more similar to the 1995 in style, this bright golden Champagne display expressive toasted and oxidative note -> honey and caramelize fruits intermixed with earth, metallic mineral and quite austere. This wine show good freshness too in spite of the oxidative style. Fullish and rounded mouth feel, a bit fleshy in the fresh and pure package, with savory salted mineral and spicy aftertaste on the almost explosive like finish. Indeed this is very good especially for the price, though I'm fond to the 1996 BDB for my personal preference. Already approachable but additional bottle aged will do this some good too. Buy - Maybe.

Masters of Wine Champagne Tasting (San Francisco, CA): Light golden color. Fine bubbles. Rich biscuity nose. Creamy mouthfeel of citrus, toast, and hint of caramel. Medium length finish. Questionable QPR. While this is unquestionably an excellent Champagne, oddly, the more I drink vintage Bruno Paillard the more I seem to find myself preferring the non-vintage Brut Premiere for a fraction of the cost.
