Decanted one hour. Medium body. Blackberry nose and licorice palate, medium tannin that settled in rather quickly. 2nd day: smoke, dark licorice and asphalt to the nose with blackberries and perfect tannin to the palate. Very pleasant, but held back to the palate. Perhaps in its prime now, or close to it. 3rd day: licorice creosote on the nose and similar to the palate, tannins beautifully incorporated.

My go to!! Great value! 45+ minute decant and could use more. Dark cherry color. Cherry, eucalyptus, and cedar on the nose. Chewy, deep wine. More fruit forward that other vintages, but has great texture. Medium finish. Love it!

Saint Emilion 2000 vintage: 15 years in bottle (Grill Room at the Rosewood): Another nice surprise was wine #10, Château Dassault, which scored 92 points in my book and had people reaching – yet again – for their notepads to write the name down. Although the tannin was a bit hard, it never dried, and had quite a bit of juicy mid palate fruit as well, if not as opulent as, say, Angélus, for example. But it costs - what? - 10 times less than Angélus? An excellent QPR.

Comprehensive 2000 St Emilion Blind Tasting (The Grill Room at the Rosewood DC): Wine 10 - Very ripe black fruit driven nose, lactic and fine dust. Excellent concentration, silky, bright acidity, dry tannins and a medium to long finish with dry tannins that ringers. Impressive showing but need time to resolve the tannins.

This wine is in a perfect spot with a dark colour with some edge bricking. The nose is classic Merlot with plums, cherry and cassis with some blackcurrant cedar and earth touches. The palate is of medium density with round juicy fruit and a fine finish. It has a little less of everything than a great St E but is well resolved and a fine food wine.

Dark core with garnet rim. Blue fruit nose with some chocolate. Very soft, immediately Merlot recognizable, palate. soft tannins but not much structure and quite short. Vin correct would you say in French but not much beyond.

2000 Vintage Bordeaux Tasting (Crystal Wines): Aromas of herbs, cherries and some brett. Palate light bodied with cherries and raspberries. Tannins quite thin. Aftertaste had moderate length. Palate couldn't carry the nose.

Medium/deep garnet, pale garnet rim. Nose is quite youthful with dark plum, notes of blackcurrant, vanilla and spice. Slightly savoury edge. Medium bodied on the palate, tannins now quite well integrated, not overly complex, deep or long but reasonably attractive and balanced. Seems to have come on quite well since last tasted.

Deep crimson with some red at the edge. Nose complex blue and red fruits with truffles. Quite stiking and has developed over past 2 years. Palate medium density with fine tannin structure and length. Lovely subtle wine revealing more with age.

Dark red, crimson. Nose rich plum, dark cherry, blackcurrant. Palate more elegant rich mid palate followed by fine tannin length. Very good mid level St Emilion for drinking now.

Popped and poured. classic bordeaux nose. not too complex but a nice drinking smooth wine that gives lots of pleasure. Still youthful, and while I don't see it improving much, it still has a lot of life left.

Decanted 1/2 an hour. Youthful appearance with a deep ruby core, narrow pale ruby rim. Sweet, oaky, plummy nose. Lots of (too much) new oak here with vanilla to the fore. Slight musty edge which blew off with time. Medium/full bodied on the palate, sweet ripe plummy fruit and vanilla on initial attack, some dark cherry notes, moderate acidity, quite tannic on the mid-palate and more so on the chewy, slightly dry finish. Shame about the oak as there is some nice fruit lurking underneath here but given the heavy handed approach I'm not sure this will ever come round. 84?
