So delicious. The most refreshingly drinkable pet-nat. Bright fresh red fruits: wild strawberry, cranberry, raspberry with a tart finish. Such a deep concentration of fruit and depth in the mid palate, then a really long finish. A depth and a quality rarely found in this style of wine.

Difícil vino, espumoso elaborado por el método ancestral de color rosado y notable carácter afrutado, con una burbuja intensa pero bastante fina y bien integrada y notable expresión frutal. Sólo tiene 7% de alc y es fruto del ensamblaje de gamay y poulsard. Elaboran también un monovarietal de gamay y el ensamblaje se distingue del monovarietal por la expresión "Récolte Cécile" que pone en la contra. Un vino de aperitivo o de postre muy particular. Se bebe como el agua y a mi, personalmente, me dejo algo "descuadrado". Como siempre Pepe Ferrer consiguió sorprenderme.

Fizzy rose for Valentine's Day. Dark pink, medium body, off dry with an oily note on the nose followed by sweet red fruits on the palate. Low alcohol and enjoyable, needed more acidity to be truly gulpable.

A private lunch (Restaurant In de Wulf *, Dranouter, Belgium): Fresh and yeasty, slightly lactic, hint of funk, sweet strawberries, spices, bright, refreshing, crisp, light and juicy (8% ABV), estery raspberry fruit, delicately sweet, lively mousse, good length. Uncomplcated but really charming and attractive.

Eurocentric Trade Tasting; 8/17/2012-8/18/2012: From 2011 fruit. Earth and stems on the nose. The palate is totally different, it is sweet and rounded. Tasty but I'm not sure how much I could drink before the sweetness overwhelmed.

A little cheesy, funky and feral but with some enticing things as well including a big hit of freshly pounded juniper berries and some squishy strawberries. It has a little residual sugar and is packed with plenty of flavour. The finish is crisp with some slightly bitter quinnine notes at the end.

Very fun wine. Very grappy and and nice level of sweetness, but don't get to into the nose as an underlying funk pervades. Tasted twice with similar notes.

A great pairing with a typical American Thanksgiving dinner (turkey, stuffing, cranberry-based dressing, mashed potatoes, turnips, etc. etc. etc.) Fine bubbles give this subtle lift, it has bright strawberry and red fruit to go along with bright strawberry color, a touch sweet, yet with some fine tannins and structure with a touch of earthier / smokey elements. Very low alcohol (8%), it has almost a cider quality to it. As an "N.V." I have no idea what kind of variation to expect in this label.

Maybe it's me, but this didn't shine like the last one. Drank from a white wine glass, not a flute, and wondering if that makes a difference. Less austere, bigger fruit and the sweet a little out of blance. Still very fun, but just not the same wow. Maybe it is me. Maybe it's the glass.
Tried it later in a Riedl champagne flute. Not the glass. In this one, I noticed an aroma which is not unlike an old ashtray. And not pleasant.

I've been on a big B-C kick lately. And this is one of the most elegant I've tasted. Not as candied/sweet as the previous. Brilliant structure. Great purity of fruit. Black cherry cola meets blanc de blancs Champagne.
