4/14/2019 1:00:00 PM - I respectfully disagree about drinking good wines on day one only. Quite the contrary. Most really good red wines are better on day 2 or day 3 or more. I usually open better reds the day before I wish to drink them. I pour out 1 ounce and taste and cork back up. If I sense they won't last, I do drink up day 1. Most times they are much better on subsequent days. This is especially true for Bordeaux and "Big" CABS. Not so much Zin, Spanish, or Italian, except Barolo. The 2014 Ridge was tight on day 1. I was wrong, however, for waiting.
