Opened the bottle to let it breathe for about 30 minutes to air prior to serving with a Parmesan, Mushroom, and shrimp risotto. I was concerned the wine would not hold out of the bottle given it’s age/ Out of the bottle strong lychee notes. Yellow Golden color. Very nice bouquet. Very tight at 30 minutes. 60-90 minutes later it’s opened up with the lychee notes dissipating and figs surfacing. Paired well with the risotto. Wine is still opening up and still has structure. Pleasant surprise.

This wine is a great example of fine wine craft. Decanted for over an hour. It’s aged nicely. The color has lightened. Subdued tannins, low acidity heavier on the earthy notes Notes of Spices, light leather, currants, wooden drawer. 2-1/2 hours after decanting the wine retained its character. Very nice.

When opened I got a burst of wonderful smells which held theoughout the two hour time frame during which my wife and I consumed the bottle. I should note that our bottle was held in ideal (temperature) condition since the wine was bottled and purchased. There was no wine seepage on the cork. The wine had a strong golden color and has aged gracefully. The scent of honey suckle held throughout. The wine was well balanced and had a nice long finish. Really enjoyed it and only wish we had another bottle.
