  • 1980 Inglenook Vineyards Cabernet Sauvignon

    This was a 6 Liter that i purchase when the wine library was sold off prior to Francis Ford Copolla taking possession of the facilities (1992 - 1995 cant recall). It has been stored in perfect conditions since departing the Inglenook winery and endured under 120 miles of travel during its lifetime. At 29 years of age (the wine; not I) and having read mixed reviews on single bottles, it was time to drink. This is an example of how large formats DO make a difference. Opened at 5pm tasted and it felt thin on the pallet, and resembling more of a Merlot than a Cab. Overall, I knew if it didn't open up, i would be describing it as dull and disappointing. I decanted into several jugs, and within half an hour it was transformed into a surprisingly full bodied, complex, layered Bordeaux style Cab I was proud to be sharing on my birthday. Don't let the age fool you, this Napa wine stood the test of time (thanks to its big bottle). With under an additional hour of airing in the jugs, I rebottled it and transported it to Steamer's restaurant in Los Gatos Ca. It was then served into a decanter. We polished all of it; the last drops were served by 10 pm. It drank well with Artichoke and Crab dip, Mediterranean inspired Seabass, Premium aged New York steak with mustard Bernaise, Cheeses and Chocolate desserts.
