Critic tasting note: "This comes from high up in the Chevalier-Montrachet vineyard, from vines surrounding a small workers shed, the “cabotte.” It is the better of the two bottlings from this vineyard by Bouchard, although “better” here is like differentiating between two stars on top form. It has great poise, so although the richness is there, it is shot through with acidity and citric flavors that underline the huge, ripe fruit. - In Burgundy, the " cabotte " or cabote, meant a little dry stone shelter on the edge of the vineyards which the growers used for lunch or for protection from the rain. That which gave its name to this vineyard can still be seen between the Montrachet and Chevalier-Montrachet appellations. Bouchard Père & Fils vinifies the grapes from this vineyard separately (21 "ares") for it is the most prestigious of Chevalier- Montrachet. The land is located in the continuity of the Montrachet and was part of this appellation at the beginning of the 20th century.
