Quite a floral nose of Arum lily and heady blossom. There is rich peach fruit and some custard apple. It is unctuous and full with a finish that drives on.

Tasted blind. This was paired with a crab, white egg dish and it was a match made in heaven because the wine was really rich and buttery. Had some nutty notes as well but stayed clear from the oxidative side. A bit too baroque for my palate but what a pairing this was.

Very nice nose on citrus fruits, white flowers and wet stone. The palate is velvety, with a touch of fat and good texture. It remains quite monastic on the palate on citrus and butter while the nose is exuberant. However the balance is there, it is pleasant and very drinkable. The finish is explosive, long and powerful. It is syrupy, the wine lines the throat and aromas of salted butter caramel invade everything. Very good length. It's dense while still being digestible.
Very good, too bad the mouth has what I would call a misfire in the sense that wine has everything for it, but the second stage of the rocket unfortunately does not ignite. This empty spell is compensated by a finish of rare intensity. Despite everything, it falls short of the benchmark of the appellation that remains for me Leflaive.

I quite liked this - big but very chiseled nose, orchard fruit more than citrus with lots of mineral and a touch of spearmint. More impressive on the palate where its depth really resonates; a fresh and long finish.

The nose was rich, nutty and intensely floral, with slight citrus. There was plenty of minerality on the palate, and the finish was long with a trace of bitterness. As the fruit had largely faded in this bottle, I wouldn't hold any longer.

Light golden in color, very perfumed sweet white fruit nose, floral and hint of oak. Very sweet but fresh, concentrated, mildly flinty. Very fine but powerful. Long finish. Wow!

HDH Burgundy Auction (Chicago, IL): A very large-scaled chardonnay. Shows quite austere, with some fat fruit, but the story of the day here is oak, which is a little bit more astringent than I prefer. Good density and power, but all overshadowed by the oak.

Gregg's Belated Birthday (Formento's - Chicago IL): Only open 15-30 minutes before serving. Backward nose to start, but a burst of energy on palate. Aromas kept opening and expanding, finally showing great floral and spice charm after 2 hours. Flavors kept expanding as well. I've had mixed experiences with this wine, but tonight's was rockstar.

Pnp, light yellow in glass. White floral, stone fruit aroma. Mineral in mouth, like licking wet stone, some honeysuckle, acidic and almost bitter. Very concentrated in term of aroma on palate but rather weightless at the same time. I am a bigger fans of Le Montrachet and Batard.

From magnum this had just a little too much butterscotch and grilled nut action on the nose. There were dense, sappy orchard fruits in the mouth. Underlying minerality is good and there's a gentle thread of something green and herbal playing in the background. Acidity has been planed off a little on the finish from the oxidative elements.

Not oxidized, in fact this was quite restrained compared to the '04 Blain-Gagnard Criots on the night. A little oaky, this needs more time to integrate well but definitely one with huge potential.

Second La Paulee Warmup Dinner (Ai Fiori - New York NY): Enjoyable, but far more advanced than I should expect from a wine at this level and age. Sad since this is the first poor bottle I can recall from this wine in 2004.

Casual (Mostly) Burg Dinner with Friends (Bistro Campagne - Chicago, IL): Ripe apple with some peach to start, followed by Meyer lemon and lemon peel in the middle and finish. Comes across as ripe and lush, but with enough acidity and minerality to keep this energetic. A very good example of this wine from a vintage that hasn't been very consistent.

Disappointed when compare with CM and M drank at the same time. Still very unbalanced and lean even after 5 hours of bottle breath. Will keep another bottle for at least 2-3 years.

Wine with the NEXT Chicago Steak Dinner (NEXT Restaurant - Chicago IL): Open ~20 minutes before serving. Lots of peach and ripe apple aromas. A subtle floral note to start, that expanded with more air. Very good concentration and density that also seems to expand with more time in glass, this is the best bottle I can recall of this wine, and one that really showcased the vineyard's Montrachet heritage.

Laser focused precision, loaded with minerals. This is a fantastic wine for food pairing, the acidity slices through anything -- tonight it worked very well with smoked salmon, lobster, caviar, duck, mushrooms, and pasta. Brilliant!
Still young, I expect it to put on weight in th coming years. Drink it and enjoy today, or be patient and enjoy it even more in 5 years.

Ninth Annual White Truffle Dinner (Chez Weber - Chicago IL): Ripe stone fruit start with some baking spice. Ripe and mature flavors, lots of concentration, good background spice. More advanced than I would expect. If served blind, I'd have most likely thought this from 1999 or 2000. Drink up, if this bottle is representative.

We drank two bottles. I must admit that, while I very much enjoyed the wine overall, I was a little disappointed. I prefer the normal CM from Bouchard I think. Perhaps because La Cabotte needs more time to evolve.

This is absolutely gorgeous. It is still a little tight and it took a while to coax something from the nose, but when it opened up it had beautiful floral and pear notes. The flavors are still quite taut, but this is a very pure and intense wine from beginning to end. Solid structure with plenty of acid. The minerality causes the finish to linger forever. Beautiful wine.

Massive power and structure, more like Corton Charlemagne at this stage. With air some of the Chevalier characteristics emerge - white flowers, minerals. Give this time. B now, sky's the limit with time.

Tasted very young. Initially very big with a biting finish, but I think served too cold. After it warmed true subtle character emerged. Very floral delicate with outstanding balance and smoothness. Spectacular with food with some fat. Was amazing with dinner - cheese, truffle pizza, seafood risotto, and lamb. Amazing...
