Burgs, Birds, and Black Truffles (My place, Portland OR): Oh how I love the nose on this wine. This is pristine, polished, and refined with excellent depth to the tones of red and green apples, pears, biscuits, white fruits, baking spices, limes, toast, acacia flowers, and meyer lemons. The Medium bodied feel is deft and balanced with racy, high acidity that really makes your mouth water. This is just such a lovely Blanc de Blancs and I can't get enough of it. I do wish that it hadn't taken off in price like it has, but such is something that felt inevitable.

Might be the wispiest, most ethereal champagne I’ve had the pleasure of. Honestly would have been hard-pressed to think it was either BdB or extra brut tasted blind but was a wonderful experience. Yellow apple, a bit of the zesty citrus one expects, slightly yeasty. Mostly it’s just the mouthfeel that’s so remarkable.

Nose of toasted brioche and minerality. Rich, buttery flavor. Just a hint of sweetness. Really excellent. Amazing, long finish. A stellar champagne.
