  • This 35 year old Chablis continues to show better on the second day.
    When first opened, it came across both as austere and not quite clean.
    The following day, the Chablis character finally comes through with salinity, citrus fruit, floral and smoky notes.
    This Chablis will live 50 years!

  • First of 8 bottles.
    Good fill level and cork in good condition.
    The hue is excellent for a Chablis of this age; looking more like a 10 year old wine.
    Not decanted given its age, but it turned out tat it should have been...
    Fairly discreet nose at first, confirming its Chablis identity but little else.
    What this wine needed was time in the glass to open up. Three hours later, the wine had gained in aromatic intensity and complexity. The mouthfeel had also evolved moving from the acid driven aspect of the 86 vintage to something riper and more interesting.
    Citrus fruit, white flowers, seashells are all present. Yes, the acidity is pronounced ( otherwise this wine wouldn't have survived this long) but it's now balanced by textural richness not evident at the beginning.
    a little bit of a phenolic bite at the finish but not detracting.
    A revelation...
    first bottle from this relatively unknown producer.
