Wild and savoury smell. Leather, black olive, tobacco. Sweet blackberry in the background. Full bodied, big presence in the mouth still. Soft tannins, enough bright fruit acid. Splendid wine. Just what mature Hermitage should taste of.

Open in the decanter for 3 or 4 hours. Blackberry smell. Lots of savoury leather and spice. Sweet fruit and smoke, iron. Mouth filling fruit, tannins present but well resolved. Still bright and fresh. Black olive, blackberry and milk chocolate. Excellent. I hope the Hermitage of recent vintages will be as good in 25 years.

Spice, iron, black olives, very earthy and savoury. Later some black fruit, blackberry and plum, but the fruit is definitely beneath the savoury smells. Cedar, cigars, still plenty of acid and tannin, mature but in no way past its best. Meaty, earthy Hermitage.

Awesome wine. Real, old-school Hermitage, with lots of smoked and raw meat and a wild, almost lashing acidity up its spine that integrated with air. This is broad-shouldered and muscular as Vallouit's Hermitages often are, dog bless them.

Nose of flowers, sweat, nice secondary, meat, tomato - savory, sweet spices. Palate shows florals, meaty, tart acidic in middle. meat/saline, savory - tart red fruit and savory finish. Zak and Salil always like the Vallouit better than I do. Nose - 5-5.5/6, Palate - 5/6, Finish - 4.5/6, Je ne Sais Quoi - 1-1.5/2 = 15.5-16.5/20.
