This was a beautifully intense wine once you give it about 3+ hours in the decanter. Air really improves this. I've come to love these wines as they show class, verve, structure and incredible flavors. Too bad you can't find these anymore!

Time to Taste 2000 Bordeaux (R&D's): Courtesy of Doc, opened and allowed to breathe in bottle for 2 1/2 hours before dinner. Lovely dark fruit, currant and chocolate notes carry through on the palate. Abundant fruit on the palate. Balanced, with a nice finish. The vineyards, now Peter Michael's Au Paradis, sit above and beyond the Dalla Valle property, so it was fun to taste these two wines tonight. At peak IMO.

So now at 14 years this wine has become so melancholy yet still rich with flavor. I get aged blackberry preserves, black cherry, some fig and stewed meat. Decanted 2-3 hours and worth that.

Nose is really nice/interesting. Full body, deep dark flavors, typical big extracted modern cab. Not showing much maturity, other than absence of fresh fruit. Gave me headache. But good stuff.

Still good in Nov 2018. Deep red color, fruit forward nose. Early finish but tannins still holding.
