Almost 2 years on from my last note, and this is, I suspect, the last bottle that I will be able to source from the 30 July 2014 disgorgement. 60/40 PM/PN. 3g/l dosage.
With nearly 9 years bottle age post-disgorgement this now has a darker yellow hue. The nose is not so aggressive as it was in 2019, but I still get wasabi, peas and smoke, but in an attractive way. The palate is very crisp, focussed, steely, green apples, but less overtly acidic than I recall from previously and rather well-balanced. There's a rather attractive creamy note on the finish which is very more-ish.

2019, disgorged 7Jun22 without dosage. beautiful, clean, good sweet pear, quince, yuzu, acid in check. Drinking wonderfully now, life ahead, but I won’t be able to keep my hands off the others.

Very dry, steely whipped cream & red raspberry in the nose. Honeyed wheat biscuit aroma emerges with air. Some green stems. This is a great champagne for fried chicken—the acidity cleaved through the fatty spice remnants on the palate.

As enticing and appealing as the nose was, I had high hopes that the palate would follow suit. Alas, that wasn't the case; the palate tasted a bit green and unripe in comparison. Still, it was enjoyable enough. The nose just led me somewhat astray of what to expect from it.

PALATE: Sweetness: dry Acidity: medium (+) Alcohol: medium Body: medium (+) Mousse: creamy Intensity: medium (+) Flavors: lemon, lemon zest, toasted hazelnut, toast, crushed stone, red apple, salt Finish: medium (+)
CONCLUSIONS: Quality level: good Potential for ageing: can drink now, but has good potential for further ageing Other observations: organic & biodynamic wine

Two years on from my last note, but still from the same batch disgorged 30 July 2014, this is still drinking much the same. It's a very crisp refreshing, slightly different fizz which for me is an excellent aperitif.
