A bit late to the game opening this one but wow. Full bodied wine with cherry, oak and vanilla on the nose. Fig, tobacco, raisin on the pallet. Long finish. Thankfully still drinking well in May of 2021. Update, wine maker says the 06-07-08 are peak right now.

Part of three-bottle vertical of Church & State Quintessential (07/08/09). 2007 is at its perfect peak. Gorgeous medium-plus body with great complexity of tertiary flavours of dried cherry and plum, leather, spice and fine tannins and long finish. Well-balanced, good concentration and velvety mouthfeel. Paired with grilled rare tomahawk steaks. Top bottle for everyone at the tasting.

We participated a blind tasting of elegant “Q” red wines (we're running out of ideas for wine dinner themes) last night over some beef tenderloin and all the trimmings. I brought the ’07 C&S Quintessential and it was poured alongside a 2007 Quintessa from Napa (>$ 150) and a rare 2004 Quintarelli Alzero (>$300 – if you can even find it anywhere). The unanimous favourite (save for one Alzero stalwart) was the Quintessential! It paired beautifully with the beef and had a great long finish. One more bottle left!
